Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 12 oz tortellini fresh or frozen
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add crushed tomatoes and vegetable broth to the pot.
  • Season with dried basil, oregano, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat to a simmer.
  • Let it simmer for 10 minutes to blend flavors.
  • Add the tortellini to the pot and cook according to package instructions.
  • Taste and adjust seasoning if needed.
  • Serve hot, garnished with fresh basil and Parmesan cheese.
