Ingredients

  • 4 bell peppers any color
  • 1 lb ground beef or turkey
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 can diced tomatoes 15 oz
  • 1 cup rice uncooked
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Wash and chop the bell peppers into small pieces.
  • In a large pot, heat a splash of oil over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in the minced garlic and cook for another minute.
  • Add the ground beef or turkey, breaking it apart, and cook until browned.
  • Pour in the diced tomatoes and broth, bringing to a simmer.
  • Add the chopped bell peppers, rice, Italian seasoning, salt, and pepper.
  • Cover the pot and let it simmer for about 20 minutes.
  • Check the rice for doneness, adding more broth if necessary.
  • Once cooked, serve hot, garnished with fresh parsley.
