Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  • In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
  • Beat in the egg, molasses, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  • Roll the dough into balls about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with the palm of your hand.
  • Bake in the preheated oven for 10-12 minutes, until the edges are firm.
  • Remove from the oven and allow them to cool on the baking sheet for 5 minutes.
  • Transfer cookies to a wire rack to cool completely.
