Ingredients

  • 4-5 ripe peaches peeled and sliced
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter diced
  • 1 pie crust store-bought or homemade

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the pie crust in a 9-inch pie dish and set aside.
  • Peel and slice the peaches, placing them in a large mixing bowl.
  • Add the granulated sugar, cornstarch, cinnamon, and lemon juice to the peaches.
  • Gently toss the mixture until the peaches are well coated.
  • Pour the peach filling into the prepared pie crust, spreading it evenly.
  • Dot the filling with small pieces of butter.
  • Cover with a second pie crust, sealing the edges and making slits for steam to escape.
  • Bake in the preheated oven for 15 minutes.
  • Reduce the temperature to 350°F (175°C) and continue baking for 30 minutes until golden brown.
