Preheat your oven to 375°F (190°C).
Place chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.
Season both sides with garlic powder, paprika, salt, and pepper.
Spread shredded mozzarella evenly over the chicken.
Add sliced jalapenos on top of the cheese.
Carefully roll the chicken tightly, starting from one end.
Secure the roulade with toothpicks.
Dip the roulade in the beaten egg, then roll in breadcrumbs to coat.
Heat olive oil in a skillet over medium heat and sear the roulade on all sides until golden.
Transfer to the oven and bake for 20 minutes or until cooked through.
