Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup mozzarella cheese shredded
  • 2-3 jalapenos sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 egg beaten
  • 1 cup breadcrumbs
  • Olive oil for frying

Instructions

  • Preheat your oven to 375°F (190°C).
  • Place chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.
  • Season both sides with garlic powder, paprika, salt, and pepper.
  • Spread shredded mozzarella evenly over the chicken.
  • Add sliced jalapenos on top of the cheese.
  • Carefully roll the chicken tightly, starting from one end.
  • Secure the roulade with toothpicks.
  • Dip the roulade in the beaten egg, then roll in breadcrumbs to coat.
  • Heat olive oil in a skillet over medium heat and sear the roulade on all sides until golden.
  • Transfer to the oven and bake for 20 minutes or until cooked through.
