Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 2 large eggs
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1 small onion chopped
  • 1 bell pepper diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine cornmeal, milk, and eggs; mix until smooth.
  • Add black beans, corn, cheese, onion, bell pepper, chili powder, cumin, salt, and pepper to the cornmeal mixture.
