Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest optional
  • Powdered sugar for dusting

Instructions

  • Preheat your oven to 375°F (190°C) and grease your madeleine pan.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the eggs and sugar until thick and pale.
  • Add the melted butter and vanilla extract to the egg mixture, mixing well.
  • Gradually fold in the dry ingredients until just combined.
  • Optionally, add lemon zest for a citrusy flavor.
  • Fill each madeleine mold about 2/3 full with the batter.
  • Bake in the preheated oven for 10-12 minutes until golden brown.
  • Remove from oven and let them cool for a few minutes before transferring to a wire rack.
  • Dust with powdered sugar before serving.
