In another bowl, beat the eggs and sugar until thick and pale.
Add the melted butter and vanilla extract to the egg mixture, mixing well.
Gradually fold in the dry ingredients until just combined.
Optionally, add lemon zest for a citrusy flavor.
Fill each madeleine mold about 2/3 full with the batter.
Bake in the preheated oven for 10-12 minutes until golden brown.
Remove from oven and let them cool for a few minutes before transferring to a wire rack.
Dust with powdered sugar before serving.
