Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup coconut sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond butter
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine almond flour, rolled oats, coconut sugar, baking soda, and salt.
  • In another bowl, mix almond butter, applesauce, and vanilla extract until smooth.
  • Gradually add the wet mixture to the dry ingredients, stirring until combined.
  • Fold in dark chocolate chips gently.
  • Use a spoon to scoop dough onto a lined baking sheet, spacing them apart.
  • Press each cookie slightly to flatten.
  • Bake for 10-12 minutes or until golden brown.
  • Remove from the oven and let cool on the baking sheet for about 5 minutes.
  • Transfer cookies to a wire rack to cool completely.
