In another bowl, mix almond butter, applesauce, and vanilla extract until smooth.
Gradually add the wet mixture to the dry ingredients, stirring until combined.
Fold in dark chocolate chips gently.
Use a spoon to scoop dough onto a lined baking sheet, spacing them apart.
Press each cookie slightly to flatten.
Bake for 10-12 minutes or until golden brown.
Remove from the oven and let cool on the baking sheet for about 5 minutes.
Transfer cookies to a wire rack to cool completely.
