Cut the steak into bite-sized pieces and pat them dry with paper towels.
Season the steak bites generously with salt and pepper.
In a large skillet, melt 2 tablespoons of butter over medium-high heat.
Add the steak bites in a single layer and sear for 2-3 minutes.
Flip the steak bites and cook for another 2-3 minutes for medium-rare.
Remove the steak bites from the skillet and set aside.
In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant.
Return the steak bites to the skillet, adding thyme and parsley, and toss to coat.
Serve immediately, garnished with additional herbs if desired.
