Roll out one disk on a floured surface to fit a pie pan.
Place the rolled dough into the pie pan and trim excess edges.
In a separate bowl, combine sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice.
Fill the pie crust with the apple mixture.
Roll out the second disk, cut into strips, and create a lattice top over the apples.
Brush the top with melted butter and sprinkle with sugar.
Bake for 45-50 minutes until the apples are tender and the crust is golden brown.
