Season the beef roast with salt, pepper, and dried herbs.
In a large skillet, sear the roast on all sides over medium-high heat for about 3-4 minutes.
Transfer the roast to the crockpot.
Add the chopped potatoes, carrots, onions, and minced garlic around the roast.
Pour the beef broth and Worcestershire sauce over the ingredients.
Cover the crockpot with the lid.
Set to low heat and cook for 8 hours, or on high for 4 hours.
Check the internal temperature; it should reach at least 145°F for safety.
Once cooked, remove the roast and let it rest for 10 minutes before slicing.
Serve the roast with vegetables and spoon some broth over the top for added flavor.
