Ingredients

  • 3-4 lbs beef roast chuck or round
  • 4 medium potatoes chopped
  • 3 carrots sliced
  • 1 onion quartered
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  • Season the beef roast with salt, pepper, and dried herbs.
  • In a large skillet, sear the roast on all sides over medium-high heat for about 3-4 minutes.
  • Transfer the roast to the crockpot.
  • Add the chopped potatoes, carrots, onions, and minced garlic around the roast.
  • Pour the beef broth and Worcestershire sauce over the ingredients.
  • Cover the crockpot with the lid.
  • Set to low heat and cook for 8 hours, or on high for 4 hours.
  • Check the internal temperature; it should reach at least 145°F for safety.
  • Once cooked, remove the roast and let it rest for 10 minutes before slicing.
  • Serve the roast with vegetables and spoon some broth over the top for added flavor.
