Place the chicken breasts in the bottom of the crockpot.
Pour in the chicken broth over the chicken.
Add diced onion and minced garlic on top.
Layer sliced carrots and celery over the onion.
Sprinkle dried thyme and paprika over the vegetables.
Season with salt and pepper to taste.
Cover the crockpot with the lid.
Set to low and cook for 6-8 hours or high for 4-5 hours.
Once cooked, shred the chicken using two forks.
Stir the shredded chicken back into the broth and serve warm.
