Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Place the chicken breasts in the bottom of the crockpot.
  • Pour in the chicken broth over the chicken.
  • Add diced onion and minced garlic on top.
  • Layer sliced carrots and celery over the onion.
  • Sprinkle dried thyme and paprika over the vegetables.
  • Season with salt and pepper to taste.
  • Cover the crockpot with the lid.
  • Set to low and cook for 6-8 hours or high for 4-5 hours.
  • Once cooked, shred the chicken using two forks.
  • Stir the shredded chicken back into the broth and serve warm.
