Heat sesame oil in a large skillet over medium heat.
Add the diced chicken and stir-fry for about 3 minutes until heated through.
Push the chicken to one side of the skillet.
Pour the beaten eggs into the other side and scramble until fully cooked.
Add the mixed vegetables and cook for another 3-4 minutes until softened.
Stir in the cooked rice, breaking up any clumps.
Pour soy sauce over the rice mixture and mix well.
Add salt and pepper to taste.
Toss in chopped green onions and any optional garlic or ginger.
Stir everything until evenly combined and heated through, then serve immediately.
