Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 cup cooked chicken diced
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 eggs beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions chopped
  • Salt and pepper to taste
  • Optional: garlic ginger

Instructions

  • Heat sesame oil in a large skillet over medium heat.
  • Add the diced chicken and stir-fry for about 3 minutes until heated through.
  • Push the chicken to one side of the skillet.
  • Pour the beaten eggs into the other side and scramble until fully cooked.
  • Add the mixed vegetables and cook for another 3-4 minutes until softened.
  • Stir in the cooked rice, breaking up any clumps.
  • Pour soy sauce over the rice mixture and mix well.
  • Add salt and pepper to taste.
  • Toss in chopped green onions and any optional garlic or ginger.
  • Stir everything until evenly combined and heated through, then serve immediately.
