Ingredients

  • 2 large flour tortillas
  • 1 cup cooked shredded chicken
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn fresh or frozen
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 avocado sliced
  • 1/2 cup shredded cheese cheddar or Monterey Jack
  • Salsa and sour cream for serving

Instructions

  • Warm the tortillas in a skillet over medium heat for about 30 seconds on each side.
  • In a bowl, mix the shredded chicken with the black beans, corn, diced tomatoes, red onion, and cilantro.
  • Add salt, pepper, and any desired spices to taste.
  • Lay one tortilla flat on a clean surface.
  • Spoon half of the chicken mixture in the center of the tortilla.
  • Add slices of avocado and sprinkle cheese on top.
  • Fold in the sides of the tortilla and roll it up tightly from the bottom.
  • Repeat the process with the second tortilla and remaining filling.
  • Place the burritos seam-side down in the skillet and cook for 2-3 minutes until golden brown.
  • Serve warm with salsa and sour cream on the side.
