In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
If desired, fold in chocolate chips.
Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden.
Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
