Ingredients

  • 2 large eggs
  • 1 small tortilla flour or corn
  • 1/4 cup shredded cheese cheddar or Monterey Jack
  • 1/4 cup cooked breakfast sausage crumbled
  • 1/4 avocado sliced
  • 2 tablespoons salsa
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • In a small bowl, whisk the eggs with a pinch of salt and pepper.
  • Heat a non-stick skillet over medium heat.
  • Add the crumbled sausage and cook until browned.
  • Pour in the whisked eggs and scramble until fully cooked.
  • Warm the tortilla in another skillet for about 30 seconds on each side.
  • Once the eggs are cooked, place them in the center of the tortilla.
  • Top with shredded cheese, slices of avocado, and salsa.
  • Fold the sides of the tortilla over the filling.
  • Roll it up tightly from the bottom to the top.
  • Serve warm, garnished with fresh cilantro.
