Ingredients

  • 3-4 lbs beef roast chuck or ribeye
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • 1 cup beef broth
  • 1 onion quartered
  • 4 carrots chopped
  • 4 potatoes chopped

Instructions

  • Preheat your oven to 450°F (232°C).
  • Pat the beef roast dry with paper towels.
  • Rub olive oil over the entire surface of the roast.
  • Sprinkle salt, pepper, rosemary, and thyme evenly on the roast.
  • Heat an oven-safe skillet over medium-high heat.
  • Sear the roast on all sides until browned (about 4-5 minutes per side).
  • Add minced garlic, onion, carrots, and potatoes around the roast.
  • Pour beef broth into the skillet.
  • Cover with foil and roast in the oven for 1 hour.
  • Remove foil and continue roasting for an additional 1-2 hours until desired doneness.
