Heat an oven-safe skillet over medium-high heat.
Sear the roast on all sides until browned (about 4-5 minutes per side).
Add minced garlic, onion, carrots, and potatoes around the roast.
Pour beef broth into the skillet.
Cover with foil and roast in the oven for 1 hour.
Remove foil and continue roasting for an additional 1-2 hours until desired doneness.
