Preheat your oven to 350°F (175°C).
In a skillet, brown the ground beef with chopped onion until fully cooked.
Drain excess fat and season with garlic powder, cumin, salt, and pepper.
Warm the corn tortillas in a separate pan to make them pliable.
Spread a thin layer of enchilada sauce in the bottom of a baking dish.
Fill each tortilla with a portion of the beef mixture and sprinkle with cheese.
Roll the tortillas tightly and place them seam-side down in the baking dish.
Pour the remaining enchilada sauce over the rolled tortillas.
Top with additional shredded cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
