Ingredients

  • 1 lb ground beef
  • 1 cup onion chopped
  • 2 cups enchilada sauce
  • 10 corn tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Sour cream for serving

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef with chopped onion until fully cooked.
  • Drain excess fat and season with garlic powder, cumin, salt, and pepper.
  • Warm the corn tortillas in a separate pan to make them pliable.
  • Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  • Fill each tortilla with a portion of the beef mixture and sprinkle with cheese.
  • Roll the tortillas tightly and place them seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas.
  • Top with additional shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
