Ingredients

  • 2 ripe bananas mashed
  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/2 cup protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the Greek yogurt and honey (or maple syrup) to the bananas and mix well.
  • Beat in the eggs until fully incorporated.
  • In a separate bowl, combine the rolled oats, protein powder, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
