Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  • Preheat your oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.
  • Cut the zucchinis into fry-shaped sticks.
  • In a bowl, beat the eggs and set aside.
  • In another bowl, mix breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper.
  • Dip each zucchini stick into the egg mixture, then coat with the breadcrumb mixture.
  • Place the coated zucchini fries on the prepared baking sheet.
  • Spray the fries lightly with olive oil for extra crispiness.
  • Bake in the preheated oven for 15-20 minutes or until golden brown.
  • Serve hot with your favorite dipping sauce.
