Ingredients

  • 2 cups mixed greens spinach, arugula
  • 1 cup roasted carrots sliced
  • 1/2 cup pomegranate seeds
  • 1/4 cup goat cheese crumbled
  • 1/4 cup walnuts toasted
  • 2 tablespoons balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Peel and slice the carrots into thin sticks.
  • Toss the carrots with olive oil, salt, and pepper.
  • Spread the carrots on a baking sheet and roast for 25-30 minutes until tender.
  • While the carrots roast, wash and dry the mixed greens.
  • In a large bowl, combine the roasted carrots and mixed greens.
  • Add pomegranate seeds and crumbled goat cheese to the bowl.
  • Drizzle with balsamic vinaigrette and toss gently.
  • Top with toasted walnuts for added crunch.
  • Serve immediately, garnished with extra pomegranate seeds if desired.
