Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil melted
  • 1/2 cup brown sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the flour, baking soda, and salt.
  • In a separate bowl, whisk the melted coconut oil and brown sugar until well combined.
  • Add the almond milk and vanilla extract to the sugar mixture and stir.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Fold in the vegan chocolate chips.
  • Using a spoon, scoop the dough onto a baking sheet lined with parchment paper.
  • Space the cookies about 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes or until golden brown.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
