Ingredients

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter melted
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/4 cup green onions chopped
  • Salt and pepper to taste
  • 1 cup additional cheese for topping

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the potatoes with a fork.
  • Bake the potatoes directly on the oven rack for about 45 minutes, or until tender.
  • Once cool, slice the potatoes in half lengthwise and scoop out the insides into a mixing bowl.
  • Mash the potato insides with butter, sour cream, milk, and season with salt and pepper.
  • Stir in half of the cheddar cheese, bacon, and green onions.
  • Spoon the mixture back into the potato skins.
  • Top with remaining cheese.
  • Place the filled potatoes on a baking dish and bake for an additional 15-20 minutes.
  • Remove from the oven and let cool for a few minutes before serving.
