Preheat your oven to 400°F (200°C).
Wash and pierce the potatoes with a fork.
Bake the potatoes directly on the oven rack for about 45 minutes, or until tender.
Once cool, slice the potatoes in half lengthwise and scoop out the insides into a mixing bowl.
Mash the potato insides with butter, sour cream, milk, and season with salt and pepper.
Stir in half of the cheddar cheese, bacon, and green onions.
Spoon the mixture back into the potato skins.
Top with remaining cheese.
Place the filled potatoes on a baking dish and bake for an additional 15-20 minutes.
Remove from the oven and let cool for a few minutes before serving.
