Ingredients

  • 2 cups cooked chicken breast shredded
  • 2 cups mixed greens
  • 1 cup cucumber thinly sliced
  • 1 cup bell peppers sliced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup peanuts crushed (optional)
  • Juice of 2 limes
  • 3 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil

Instructions

  • Shred the cooked chicken breast into bite-sized pieces.
  • Wash and dry the mixed greens thoroughly.
  • Slice the cucumber, bell peppers, and red onion.
  • In a large mixing bowl, combine the shredded chicken and the sliced vegetables.
  • In a separate bowl, prepare the dressing by whisking together lime juice, fish sauce, honey, and sesame oil.
  • Pour the dressing over the chicken and vegetable mixture.
  • Gently toss the salad until all ingredients are well coated.
  • Add chopped cilantro and crushed peanuts for garnish.
  • Serve immediately or chill for 10 minutes to enhance the flavors.
