Ingredients

  • 12 oz penne pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 cup sour cream
  • Fresh jalapeños sliced
  • Chopped cilantro optional

Instructions

  • Cook the penne pasta according to package instructions; drain and set aside.
  • In a large skillet, brown the ground meat over medium heat.
  • Drain excess fat from the skillet.
  • Add taco seasoning to the meat and mix well.
  • Stir in the black beans, corn, and diced tomatoes.
  • Cook for 5-7 minutes until heated through.
  • Add the cooked pasta to the skillet and mix until combined.
  • Stir in half of the cheese until melted and creamy.
  • Remove from heat and fold in the sour cream.
  • Top with remaining cheese and garnish with jalapeños and cilantro.
