Ingredients

  • 10 small corn tortillas
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup diced tomatoes
  • 1 avocado diced
  • 1 cup shredded cheese
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, brown the ground beef or turkey over medium heat.
  • Drain excess fat and add taco seasoning, following package instructions.
  • Cut the corn tortillas into smaller rounds to fit into a muffin tin.
  • Spray the muffin tin with cooking spray and press the tortilla rounds into each cup.
  • Bake the tortilla shells in the oven for about 10 minutes, or until crispy.
  • Fill each tortilla cup with a tablespoon of meat.
  • Add black beans and corn on top of the meat.
  • Sprinkle shredded cheese over the top of each cup.
  • Return to the oven and bake for an additional 5 minutes, until the cheese is melted.
