Preheat your oven to 375°F (190°C).
In a bowl, mix sweet chili sauce, minced garlic, and soy sauce.
Coat the chicken breasts with the sauce mixture.
Place the chicken in a baking dish and pour remaining sauce over it.
Add your choice of vegetables around the chicken.
Cover the dish with foil and bake for 20 minutes.
Remove the foil and bake for an additional 5 minutes for a caramelized topping.
Check that the chicken is fully cooked (internal temperature should be 165°F or 75°C).
Let rest for 5 minutes before serving.
Serve with lime wedges.
