Ingredients

  • 2 salmon fillets 6 oz each
  • 1 cup spinach chopped
  • 1/2 cup cream cheese softened
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup feta cheese crumbled
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs dill or parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix cream cheese, spinach, sun-dried tomatoes, feta cheese, and garlic until well combined.
  • Season the salmon fillets with salt and pepper.
  • Make a pocket in each salmon fillet by slicing it horizontally.
  • Stuff each fillet with the cream cheese mixture.
  • Heat olive oil in a skillet over medium heat.
  • Sear the stuffed salmon fillets for 3-4 minutes on each side.
  • Transfer the fillets to a baking dish.
  • Bake in the preheated oven for 15 minutes or until cooked through.
  • Garnish with fresh herbs before serving.
