Ingredients

  • 1 pound fresh strawberries sliced
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee cooled
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  • Wash and slice the strawberries, setting some aside for garnish.
  • In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.
  • Whip the mixture until it forms soft peaks.
  • Dip each ladyfinger briefly in the cooled coffee.
  • Layer the bottom of a serving dish with dipped ladyfingers.
  • Spread a layer of the mascarpone mixture over the ladyfingers.
  • Add a layer of sliced strawberries on top of the mascarpone.
  • Repeat the layers until all ingredients are used, finishing with mascarpone.
  • Dust the top with cocoa powder.
  • Cover and chill in the refrigerator for at least 4 hours before serving.
