Ingredients

  • 2 ribeye steaks about 8 oz each
  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Fresh rosemary for garnish
  • 1 tablespoon Dijon mustard optional
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh parsley chopped
  • Fresh lemon juice to taste

Instructions

  • Peel and cut the potatoes into thin fries.
  • Soak the fries in cold water for at least 30 minutes.
  • Preheat your oven to 425°F (220°C).
  • Drain the fries and pat them dry.
  • Toss the fries in olive oil, salt, and pepper.
  • Spread the fries on a baking sheet and bake for about 30 minutes.
  • Season the steaks with salt and pepper.
  • Heat a skillet over medium-high heat and add butter.
  • Sear the steaks for 4-5 minutes on each side.
  • Let the steaks rest before slicing and serve with fries.
