Remove the steaks from the refrigerator and let them come to room temperature for 30 minutes.
Preheat your grill to high heat.
Pat the steaks dry with a paper towel.
Season both sides generously with salt and pepper.
Drizzle olive oil and rub it into the steak.
In a small bowl, mix garlic, rosemary, and thyme; rub this mixture onto the steaks.
Place the steaks on the grill and cook for 4-5 minutes without moving them.
Flip the steaks and cook for another 4-5 minutes for medium-rare.
Add a pat of butter on top and baste the steaks for flavor.
Remove the steaks from the grill and let them rest for 5 minutes before serving.
