In a mixing bowl, combine sourdough discard, flour, and salt.
Add olive oil and mix until crumbly.
If using, add garlic powder and herbs.
Gradually add water until a dough forms.
Knead the dough gently on a floured surface for 1-2 minutes.
Roll out the dough to about 1/8 inch thick.
Cut into desired shapes using a knife or cookie cutter.
Place on a baking sheet lined with parchment paper.
Bake for 15-20 minutes until golden brown and crispy.
