Preheat a cast-iron skillet or griddle over medium-high heat.
Divide the ground beef into four equal portions, about 4 ounces each.
Roll each portion into a ball; do not overwork the meat.
Place the beef balls on the hot skillet, leaving space in between.
Using a sturdy spatula, smash each ball down to about ½ inch thick.
Season generously with salt and pepper.
Cook for about 2-3 minutes until a crust forms.
Flip the patties and immediately place a slice of cheese on each.
Cook for an additional 1-2 minutes until the cheese is melted.
Toast the buns on the skillet for a minute or until golden brown.
Assemble the burgers with desired toppings and sauces.
