Season the pork chops with salt and pepper on both sides.
Heat olive oil in a skillet over medium heat.
Sear the pork chops for 3-4 minutes on each side until browned.
Remove chops and place them in the slow cooker.
Add sliced onion and minced garlic over the pork chops.
Pour chicken broth into the slow cooker.
Sprinkle thyme and rosemary on top.
Cover and cook on low for 6 hours or high for 3 hours.
Once cooked, check for tenderness and adjust seasoning as needed.
