Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup chopped greens spinach or kale
  • 1/4 cup chopped nuts optional
  • 1/4 cup dried fruit like cranberries

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes thoroughly.
  • Cut sweet potatoes in half lengthwise.
  • Place them on a baking sheet, cut side up.
  • Drizzle olive oil over the sweet potatoes.
  • Sprinkle salt, pepper, and paprika evenly.
  • Roast in the oven for 25-30 minutes until tender.
  • While roasting, prepare the greens by washing and chopping.
  • In a bowl, mix chopped nuts and dried fruit.
  • Once sweet potatoes are done, top with greens and nut mixture.
