Ingredients

  • 4 chicken breasts
  • 1 cup salsa verde
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper.
  • In a skillet, heat olive oil over medium heat.
  • Add the chicken breasts and sear for 4-5 minutes on each side until golden brown.
  • Prepare the salsa verde by blending tomatillos, cilantro, lime juice, and jalapeños.
  • Place the chicken in a baking dish and pour the salsa verde over it.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until cooked through.
  • Let it rest for a few minutes before serving.
  • Garnish with fresh cilantro and serve with lime wedges.
