Ingredients

  • 2 pounds small potatoes Yukon Gold or red-skinned
  • 1/4 cup olive oil
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • Fresh rosemary or thyme optional

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly.
  • Cut larger potatoes in half, leaving smaller ones whole.
  • In a large bowl, toss the potatoes with olive oil, salt, pepper, and garlic powder.
  • Spread the potatoes evenly on a baking sheet.
  • Roast in the oven for 20 minutes.
  • Remove from the oven and flip the potatoes for even cooking.
  • Return to the oven and roast for another 20-25 minutes until golden brown.
  • If desired, sprinkle with fresh herbs during the last 5 minutes of roasting.
  • Let them cool slightly before serving.
