Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly.
Cut larger potatoes in half, leaving smaller ones whole.
In a large bowl, toss the potatoes with olive oil, salt, pepper, and garlic powder.
Spread the potatoes evenly on a baking sheet.
Roast in the oven for 20 minutes.
Remove from the oven and flip the potatoes for even cooking.
Return to the oven and roast for another 20-25 minutes until golden brown.
If desired, sprinkle with fresh herbs during the last 5 minutes of roasting.
Let them cool slightly before serving.
