Ingredients

  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • Butter or oil for cooking

Instructions

  • In a bowl, whisk together ricotta cheese, eggs, milk, and vanilla extract until smooth.
  • In another bowl, combine flour, sugar, baking powder, and salt.
  • Gradually add the dry ingredients to the ricotta mixture, stirring just until combined.
  • Heat a non-stick skillet over medium heat and add a little butter or oil.
  • Pour 1/4 cup of the batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes and cook for another 2 minutes until golden brown.
  • Remove from skillet and keep warm while cooking the remaining pancakes.
  • Serve immediately with your choice of toppings.
