Ingredients

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  • Rinse the Arborio rice under cold water until the water runs clear.
  • In a large saucepan, combine the rinsed rice, milk, sugar, and salt.
  • Heat the mixture over medium heat, stirring frequently to prevent sticking.
  • Once it begins to simmer, reduce the heat to low.
  • Continue to cook for about 30 minutes, stirring occasionally.
  • When the rice is tender and the mixture is creamy, remove it from the heat.
  • Stir in the vanilla extract and ground cinnamon.
  • Allow the pudding to cool slightly; it will thicken as it cools.
