Ingredients

  • Rice paper wrappers
  • Cooked shrimp peeled and deveined
  • Avocado sliced
  • Cucumber julienned
  • Fresh mint leaves
  • Fresh cilantro
  • Lettuce leaves
  • Soy sauce for dipping

Instructions

  • Gather all your ingredients and prep them into bite-sized pieces.
  • Fill a shallow dish with warm water.
  • Soak a rice paper wrapper in the warm water for about 10 seconds.
  • Remove the wrapper and lay it flat on a clean surface.
  • Place a lettuce leaf in the center of the wrapper.
  • Add a few shrimp, avocado slices, cucumber, mint, and cilantro on top of the lettuce.
  • Fold the bottom of the wrapper over the filling.
  • Fold in the sides and continue to roll tightly until sealed.
  • Repeat with remaining wrappers and filling.
  • Serve immediately with soy sauce for dipping.
