Gather all your ingredients and prep them into bite-sized pieces.
Fill a shallow dish with warm water.
Soak a rice paper wrapper in the warm water for about 10 seconds.
Remove the wrapper and lay it flat on a clean surface.
Place a lettuce leaf in the center of the wrapper.
Add a few shrimp, avocado slices, cucumber, mint, and cilantro on top of the lettuce.
Fold the bottom of the wrapper over the filling.
Fold in the sides and continue to roll tightly until sealed.
Repeat with remaining wrappers and filling.
Serve immediately with soy sauce for dipping.
