In a mixing bowl, cream together butter and sugar until light and fluffy.
Beat in the egg and vanilla extract, mixing well.
In a separate bowl, whisk together flour and baking powder.
Gradually add the dry ingredients to the wet mixture, combining thoroughly.
Divide the dough into six equal portions.
Color each portion with a different food coloring.
Roll each colored dough into flat layers, stacking them on top of one another.
Cut the stacked dough into cookie shapes with a cookie cutter.
Place cookies on a baking sheet lined with parchment paper and bake for 12-15 minutes.
Allow to cool before removing from the baking sheet.
