Ingredients

  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 cup chopped nuts optional

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the pumpkin puree, vegetable oil, sugar, and brown sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • In a separate bowl, combine the flour, baking soda, baking powder, spices, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chopped nuts gently, if using.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack.
  • Top with cream cheese frosting or enjoy plain.
