Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large mixing bowl, combine pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
If desired, fold in the chopped nuts.
Pour the batter into the prepared loaf pan.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted comes out clean.
Remove from oven and let it cool in the pan for 10 minutes.
Transfer to a wire rack to cool completely.
Slice and serve, or store for later enjoyment.
