Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, combine pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract.
  • In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • If desired, fold in the chopped nuts.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted comes out clean.
  • Remove from oven and let it cool in the pan for 10 minutes.
  • Transfer to a wire rack to cool completely.
  • Slice and serve, or store for later enjoyment.
