Ingredients

  • 1 5-7 lb prime rib roast
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • Salt and pepper to taste
  • 1 cup beef broth

Instructions

  • Preheat your oven to 450°F (230°C).
  • Remove the prime rib from the refrigerator and allow it to come to room temperature for about 30 minutes.
  • In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper together.
  • Rub the herb mixture all over the prime rib, ensuring to cover it evenly.
  • Place the roast in a roasting pan, bone side down.
  • Roast in the preheated oven for 20 minutes to create a crust.
  • Reduce the temperature to 325°F (165°C) and continue roasting.
  • Use a meat thermometer to check for desired doneness (130°F for medium-rare).
  • Once done, remove from the oven and let it rest for 20-30 minutes.
