Pat the roast dry and season generously with salt, pepper, and herbs.
Place the roast on a rack in a roasting pan, fat side up.
Insert a meat thermometer into the thickest part of the roast.
Roast at 450°F for 20 minutes to develop a crust.
Reduce oven temperature to 325°F (163°C) and continue roasting.
Cook until the internal temperature reaches your desired doneness.
Remove from the oven and let it rest for at least 20 minutes before slicing.
