In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
Gradually mix in flour and salt until a dough forms.
Knead the dough for about 5 minutes until smooth.
Let the dough rise in a warm place for 1 hour, or until doubled in size.
Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
In a pot, bring 10 cups of water and baking soda to a boil.
Punch down the dough and divide it into small pieces (about 1-inch each).
Boil each piece in the baking soda water for 30 seconds, then remove and drain.
Place the boiled bites on the prepared baking sheet and sprinkle with coarse sea salt.
Bake for 10-12 minutes until golden brown. Serve warm!
