Ingredients

  • 4 medium potatoes peeled and diced
  • 6 slices of bacon chopped
  • 1 onion diced
  • 2 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  • Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside.
  • In the same pot, add diced onion and garlic; sauté until soft.
  • Add the diced potatoes and stir to combine.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Use a potato masher or immersion blender to partially mash the potatoes.
  • Stir in the heavy cream and season with salt and pepper.
  • Return the crispy bacon to the pot and mix well.
  • Simmer for an additional 5 minutes to heat through.
  • Serve hot, garnished with chives and additional bacon if desired.
