Ingredients

  • 2 cups of fresh pomegranate seeds
  • 1 cup of mixed lettuce
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of chopped walnuts
  • 1/4 cup of olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste
  • 1/2 teaspoon of honey optional

Instructions

  • Wash the mixed lettuce thoroughly and pat dry.
  • Tear the lettuce into bite-sized pieces and place in a large salad bowl.
  • Carefully remove the pomegranate seeds from the fruit.
  • Add the pomegranate seeds to the bowl with the lettuce.
  • Crumble the feta cheese over the salad.
  • Chop the walnuts coarsely and sprinkle them on top.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  • For a touch of sweetness, add honey to the dressing if desired.
  • Drizzle the dressing over the salad just before serving.
  • Toss gently to combine all ingredients without bruising the lettuce.
