Heat vegetable oil in a large skillet over medium heat.
Add minced garlic and sauté until fragrant.
Stir in mixed vegetables and cook for 3-4 minutes.
Push vegetables to one side of the skillet.
Add the cooked rice to the other side and break up any clumps.
Pour soy sauce and oyster sauce over the rice.
Mix the rice and vegetables until well combined.
Add diced pineapple and gently fold into the mixture.
Season with salt and pepper to taste.
Garnish with chopped green onions and optional nuts before serving.
