Ingredients

  • 2 cups cooked jasmine rice
  • 1 cup fresh pineapple diced
  • 1 cup mixed vegetables carrots, peas, bell peppers
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 2 tablespoons vegetable oil
  • 2 green onions chopped
  • 1 teaspoon garlic minced
  • Salt and pepper to taste
  • Optional: cashews or peanuts for garnish

Instructions

  • Heat vegetable oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Stir in mixed vegetables and cook for 3-4 minutes.
  • Push vegetables to one side of the skillet.
  • Add the cooked rice to the other side and break up any clumps.
  • Pour soy sauce and oyster sauce over the rice.
  • Mix the rice and vegetables until well combined.
  • Add diced pineapple and gently fold into the mixture.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions and optional nuts before serving.
