Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast diced
  • 1 cup pineapple chunks fresh or canned
  • 1 bell pepper red or green, sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger minced
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic; sauté until translucent.
  • Add diced chicken breast; cook until browned on all sides.
  • Stir in the minced ginger; cook for 1 minute.
  • Add sliced bell pepper; sauté for 3-4 minutes until tender.
  • Add pineapple chunks and soy sauce; mix well.
  • Cook for an additional 5 minutes, allowing flavors to meld.
  • Season with salt and pepper to taste.
  • Serve the chicken mixture over cooked rice.
